Banana Pancakes

Late last year Jim and I started a new diet. We cut out most sugars, carbs, dairy, alcohol and caffeine. It’s kind of like the Paleo diet I think. Have you ever cut out sugar and carbs at the same time? Don’t. I can tell you, it’s hell. But it really worked. After a few weeks I could really see a huge difference and although we’ve strayed from the diet for our Christmas and birthday periods, we are trying to get back on it now. 
This diet does however mean we have had to find some creative ways to get our sweet tooth fix. Weekend mornings usually meant something along the lines of pastries (mmmmm, almond croissants) or a frittata. so I set about finding a sweet fix for the mornings to make us not feel so cheated and one of the things I discovered whilst searching Pinterest were banana pancakes. And whilst most of the recipes I stumbled upon contained stuff we shouldn’t have, I figured we should have them and went about adjusting some recipes to make them work for us and this diet. They are really easy to make and are yummy too. The perfect weekend breakfast treat.
I know I know, I could have styled them better but I wanted to EAT!

What you’ll need;

  • 2 Bananas (old, brown and manky ones work best as always. We freeze our past their best banana’s for occasions like this and for banana bread making)
  • 4 eggs
  • 16 tablespoons almond meal/
  • 1 tablespoon agave nectar.

What to do;

  1. Mix the banana’s, eggs and agave in a bowl until they are full combined.
  2. Stir in the almond meal.
  3. Heat a flat frying pan (we have a rotti pan that Jim brought back from India that is dead flat that I use for all pancakes)
  4. Pour a small amount of oil onto the pan and with some kitchen paper make sure the entire pan is covered with a thin layer.
  5. I use a ladle sized amount of the batter for each pancake. We have a roti pan that Jim brough back from India which fits 3 of them on it. 
  6. Cook for a few minutes either side until they are starting to colour. You have to keep an eye on them as they can burn quite easily (as I have found out a couple of times)
  7. Serve with a swirl of agave syrup and some fruit, or just alone and enjoy. 
These little pancakes puff up and are more like american style pancakes than our flat ones but I am sure you could do larger ones. I’ve also added the blueberries into the mixture at cooking which is lovely too. They are really filling and feel a little indulgent even if you’re not dieting.

  2. I've seen these all around the internet recently, and I want to try them but I'm not the biggest banana fan and do they taste super banana-y? You're far braver than me on the cutting out front, I'm trying to cut back on dairy and sugars which is hard enough x

  3. I follow a similar healthy eating plan but I don't eat meat or seafood either. I'm in love with raw chocolate and raw food in general! I have had brown rice once this year haha. I love these pancakes too. I made mine without ground almonds though and they were just as good 🙂

  4. This is so timely! I am clean eating at the moment so my traditional pancakes have gone out of the window, but I'll definitely be trying these ones, they sound delicious!

  5. I am hoping to make these for my birthday as they look so yum. I will end up singing the banana pancakes song though. I can live with that though. I was even thinking of getting flower shaped fruit cutters to serve seasonal fruit (probably kiwi) with them – but that might be a step too far – even if really pretty!
